Commissary-of-record letter
Valid while your membership is active, backed by formally kept commissary visit logs, available to the health department whenever they ask.
Truck-side services
Potable water fill, gray water disposal, propane, and overnight or service-day parking. Pull up, service, roll out.
$225 of kitchen credit, monthly
Books 11 hours of prep, or 7 of bakery, or 5 of hot line at day rates. Mix freely across our six kitchens.
Facilities access 24/7
Your keycard works at 2pm and at 2am. Prep on your schedule, not ours.

1 · Credit is fixed
$225 of booking credit every month, on every term. Longer terms discount what you pay, never what you can book.
2 · Spend it anywhere
Any of our six kitchens at that kitchen's hourly rate: $20 prep, $30 bakery, $40 hot line. Nights are 40% off.
3 · No hard stop
Credit runs out mid-month? Keep booking at flex rates, 20% above the credit rate, billed the following month.
As a reference: your $225 books 11 hours of prep, or 7 hours of bakery, or 5 hours of hot line, day rates. Night prep stretches it further.

Three documents, then you're in
The Food Truck track is for licensed operators only. Bring these and the rest is paperwork we handle together:
- A valid mobile food vendor license
- A registered vehicle
- Insurance naming the truck
With these three in hand, you can be servicing at the dock in a matter of days. Not there yet? Our regular membership plans are the perfect place to build toward it.
Built so you can't get it wrong
✓Off-season covered
Freeze for $125 a month, up to 3 months a year. Your term extends by the frozen months; the commissary letter pauses while frozen.
✓Fully exitable
Plans change? Convert your remaining balance into any kitchen plan at face value, or cash out half of what remains. Your choice, in writing.
✓Storage when you need it
No storage credit on this track, but dry, cold, and short-term storage are available at catalog prices whenever you want them.
✓Know another operator?
Give $150, get $150. Refer a food business, they get $150 of first-month credit, you get $150 cash.
